Classic Vetkoek

 South African Vetkoek aka Fat Cake, crispy outside and warm and fluffy inside filled with minced curry. This is the definition of an oldie but a goodie, and making your own vetkoek is easier than you might think!

Ingredients

  • 3 cups sifted cake flour
  • 1tsp salt
  • 1tbsp white sugar
  • 10g yeast
  • 1tbsp margarine
  • 300ml lukewarm water
  • 3tbsp cooking oil

Method

  • Sieve Flour, salt and sugar together
  • Add yeast
  • Dissolve margarine in lukewarm water and add to flour mixture
  • Mix well and knead for 15 minutes
  • Cover with a cloth and stand in warm place for an hour
  • Divide into 8 portions and mould into balls
  • Brown in cooking oil until dough calls sound hollow when tapped
  • Use towel paper to absorb the excess oil

Serve the vetkoek with mince curry, grated cheese, golden syrup , or apricot jam.
