“LA VIERGE NOIR process is made with care, to ensure a taste sensation in each bottle. After an early morning harvest, de-stemmed (with the exception of 20% fermented whole bunch) and cold macerated for 7 days. After a temperature-controlled fermentation, the wine was racked into French barriques (30% new) for 9 months’ barrel ageing. It shows lightness and brightness in colour which follows all the way through the nose and palate. The bright colour promises perfume of strawberries, rosewater, smoky honey and follows.

The bright colour promises perfume of strawberries, rosewater, smoky honey and follows onto a beautiful palate that dances with luminous acidity and tannin, leaving a lingering, savoury finish. This vintage expresses the typical earthy and savoury aroma of this fine Burgundy variety and is backed by a red fruit character. A greater selection clones and blocks during picking and older elements in the blend shows a darker and more textured style in bottle from previous vintages.”
