These Golden Dice Red Speckled Beans are perfect for a Beef & Bean Curry. You’ll need:
400g chopped short rib beef
15ml cooking oil
1 finely chopped onion
½ finely chopped green pepper
15ml Cartwrights Curry
2 sliced carrots
250ml Golden Dice Sugar Beans – soaked overnight and rinsed
1 beef stock cube
30 ml of Brown Onion Soup
Start off by heating your oil in a pot, before browning the beef. Once brown, remove and set aside, before frying your onion and green pepper until soft. Add your curry powder and fry for a minute. Be sure to stir it well, then add the carrots, beans, water, stock cube and beef to the pot and bring to the boil. Reduce the heat and allow to simmer with the lid for 40 minutes. Stir occasionally and simmer until the beef and beans are soft. Then mix your brown onion soup with a bit of water to form a paste, before adding it to the stew until it’s thick. Serve with fresh homemade bread.
