Kalahari Biltong Salad

Kalahari Biltong SaladThe rise in temperature requires some shorts and shirts as well as a change in menu. We can wave goodbye to hearty stews, soup days and rich-dishes and say hello to salads, mezze and light-meals this season! This authentic South African dish is perfect for a picnic, or a starter at a dinner party!

Salad ingredients:

250g Sliced Biltong
125g Feta Cheese in Cubes
2 x Sliced Avocados
1 x Frilly lettuce
1 x Papaya
100g Bean Sprouts
1 Bunch of Rocket

Vinaigrette:

30ml chopped Spring Onion
30ml Fresh Oregano
2.50ml Sugar
200ml Olive Oil
30ml Fresh Parsley
5ml Mustard Powder
100ml White Balsamic or Safari White
Cape Herb and Spice Salt and Black Pepper to taste

Method:

Gather the ingredients for your dressing and put in a liquidiser together. Alternatively, you could also blend it, just be sure to mix well.

Now, cover the biltong with half of the vinaigrette and refrigerate until required.

This will allow the flavour to infuse the biltong, while you get the salad bowl ready. Layer the remaining ingredients and sprinkle lightly with the dressing, pour the remaining dressing in a small jug to serve.

The final step is to pile the marinated biltong on top and serve. That’s literally all it takes for a delicious meal.
